Confession time: I once bought an entire cheesecake just because I felt like having it for dessert over the course of a few days — and it was one of my better decisions in my young adult life. Who says cakes are just for celebrations?
There’s no denying that one gets a certain thrill in baking a cake from scratch, but some of us aren’t meant to work our way around an oven. However, that shouldn’t stop you, especially with our no-bake recipe for a peanut butter layer cake that’s sure to please anyone with a sweet tooth!
With six layers of peanut butter cream and chocolate Marie biscuits, this is a sweet and creamy dessert that’s perfect for those looking to indulge in something more decadent than your average cookie.
What you’ll need:
2 and a half cups of heavy whipping cream
1 bag of peanut butter chips
54 chocolate Marie biscuits
How to prepare it:
Step 1: To make the peanut butter cream, heat ⅔ cup of cream in a large microwave-safe bowl until it’s steaming. Once it’s heated up, add the peanut butter chips and whisk until it’s smooth.
Step 2: Slowly whisk in the remaining ⅓ cup of cream. Then, leave it to chill for 15 minutes.
Step 3: Beat the peanut butter cream with a mixer until soft peaks form. Then, arrange 9 biscuits, side by side with the edges touching on a serving plate.
Step 4: Spread about ⅓ cup of peanut butter cream evenly across the biscuits. Feel free to add a little more if you want the cream layers to be thicker.
Step 5: Repeat the previous step for four more layers, and then add one more layer of biscuits. Leave the cake to chill for an hour. Chill the remaining cream as well.
Step 6: Spread the top and sides of the cake with the peanut butter cream. Chill the cake for 4 hours or up to 2 days.
Step 7: Decorate the cake with peanut butter chips, if desired. Finally, slice the cake with a serrated knife.
Things to keep in mind
As you might have noticed, this cake isn’t one that’s going to be ready in under an hour, so it’s best to make it when you’re not in a hurry!
Depending on how small the slices are, the cake can feed from 10 up to 20 people, so it’s perfect if you’re wondering what to bring for that upcoming office potluck.
